Pineapple Turnovers

Serves: Makes 5 dozen

Ingredients:

1 pkg phyllo sheets, defrosted
1 c Crystal Butter, melted

Filling:

2 c crushed pineapple, strained
2 c Crystal Cottage Cheese
1⁄2 c Crystal Butter, softened
2 T honey

Directions:

Using food processor: Pulse cottage cheese until smooth; add butter and honey to mix thoroughly.
Fold in Crushed pineapple.

Assemble:

Stack 3 sheet of fillo dough, cut in half cut each half into 6-1 1⁄2” x 3” strips. Place 1 T of filling on the edge of each strip. Brush melted butter on other end of strip.

Starting at end with filling fold triangles until butter edge is reached. Place on buttered baking sheet. Butter top of triangles.

Bake at 400 until golden.
